Grandma’s Rice Pudding

  1. Boil rice in salted water until tender. Drain.
  2. Put 2 cups raisins in pan and cover with water and bring to boil.  Boil 5 minutes until plump. Drain.
  3. Butter a 2 qt bowl well and add rice.  Put raisins on top of rice. DO NOT STIR.
  4. Beat eggs with sugar. Add milk and vanilla and mix well.
  5. Pour over rice/raisins. DO NOT STIR (or raisins will sink). Sprinkle top with cinnamon.
  6. Bake at 300 degrees until set (knife comes out clean). Approx 90 minutes.
